Easy dinner recipes for two people don’t have to be boreing or difficult. With imagination and in most cases using what you’ve got in the fridge and pantry anyone can turn a typical meal into a fun treat any time of the day.
This is a simple and fun way to eat a fried egg and a piece of toast. The bread you choose can be any kind and will individualize each serving and provide a favorite taste: if your adventurous start out with a big piece of Rye bread – pumpernickel is even better. To begin use a cookie cutter ( a 8 ounce water glass will work) cut a hole right through the middle of the slice of bread. Next get your iron or nonstick skillet and placing it on the stove burner; melt a pad of butter and a tablespoon of olive oil together as the skillet warms over a medium low heat. Now lay the piece of bread on the melted oil and butter mixture and take a medium sized egg and crack it open to fall into the hole of the bread. Both the bread and the egg will cook and leave a light brown crust on the underneath side. Serve this awesome easy dinner recipes for two with sliced tomato and cucumber. Lightly salt and pepper to taste.
Ingredients:
• Two slices of your favorite bread
• Two medium eggs
• Two tablespoons butter
• Two tablespoons olive oil
• One ripe tomato – sliced
• One medium cucumber – sliced
Equipment:
• One skillet
• Round cookie cutter
Lunch can be unique and simple at the same time. Here’s how you make a great couple of grilled cheese sandwiches. Take a fresh French baguette and slice it in half. Then take the two halves and slice them length wise like you would it you were making a sub sandwich. Open the halves and layer four different cheeses on one side of each baguette. Next sprinkle Italian herb on the cheese and fold the baguette closed. Next you will want to grill it in the waffle iron until golden brown and the cheese has melted. Remove your sandwich and again open it to place 3 to 4 thinly slices pieces of tomatoes on it. Fold it back together and serve these scrumptious cheesy delights with a bowl of hot basil tomato soup.
Ingredients:
• 1 cup shredded Monterey Jack
• 1 cup shredded Mozzarella
• 1 cup shredded Swiss
• 1 cup shredded Sharp Cheddar
• One large tomato sliced
• One large ( minimum 12 inch) French Baguette
• Dried Italian herb – to taste
Equipment:
• Waffle Iron or another type of two sided electric grill
This may sound like a funny way to cook ground beef but the results are surprisingly delicious. Hamburger stew is so easy you can almost prepare it blind folded, almost. Take a medium to large size cooking pot and brown ½ – 1 pound of ground beef, minced garlic and chopped onions in it. Let it get good and brown. You may need to add a little olive oil to it depending on the fat content of the ground beef. The lower the fat of the ground beef, the dryer it will be. Some oil in the pan is preferable for the onions and garlic to brown. Remember, the darker brown the meat gets, the better the flavor of the stock. Say that three times. So now you have very brown ground beef and it’s time to add water, one package of onion soup mix, and your choice of frozen mixed vegetables. Season the stew with your favorite herbs, salt and pepper, cover and let simmer for about an hour. Viola! Serve with the other half of your baguette and a glass of red wine and one perfectly lit candle.
Ingredients:
• ½ – 1 pound of ground beef
• 1 – 2 table spoons of olive oil
• ¼ cup frozen minced onions
• 1 tablespoon minced garlic
• 6 cups of water
• I package of dried onion soup mix
• 1 cup each of your favorite frozen vegetables
• Dried basil, oregano, cumin, parsley, thyme, sage – as you desire
• Salt and pepper to taste
Equipment:
• 3 quart cooking pot with lid
